As a busy mom it's always nice to prepare a meal in under 30
min. Here are some quick meal ideas.
- Chicken Salad Sandwiches with soup/salad
- Warm Spinach Salad with Chicken and Mandarin Oranges
- Chicken pot pie (use frozen pie crust)
- Caesar Chicken Salad Wraps
- Chicken Quesadilla with salsa dip and sour cream
- Meat can be used with ready made sauces and served
with rice/pasta. I love Patak's Butter Chicken or President
Choice Green Curry.
- Bones can be used for soup the next day
One of the first things I learned to make as a teenager was
spaghetti. It was easy, tasty and quick. Brown the meat, add
vegetables and pour in the spaghetti sauce. It's so versatile and
can be slightly different every time you make it. It is still one of
freeze the extra for emergencies.
Quick meals do not have to be boring. Nowadays grocery stores
have a wide variety of ethnic food choices. You can basically
prepare a Mexican, Indian, Japanese, or Thai meal right in your
kitchen. It's as simple as adding the meat and frozen veggies
and pouring in the sauce.
What I've been doing lately is buying a large tray of chicken
breasts on Mondays and I prepare three meals all at once. I
cube the entire tray of chicken, marinate it with some garlic, soy
sauce and cornstarch and stir-fry until almost cooked. Then I
separate them into three saucepans and add a different sauce. I
now have 3 meals for the week and it only took me a bit longer
to prepare then one meal. Last week we had Japanese curry,
Thai Green Curry and Indian Tikka Masala. My husband also
brings lunch to work so now he can have some variation too.
